Christmas is only a few days away, and it's all about the cookies. Especially these Peppermint Mocha Cookies! I know what you are thinking.. You've already seen tons of recipe for peppermint chocolate cookies on the internet, why do you need another one? Because these are the BEST Peppermint Mocha Cookies! Trust me on this! These soft and chewy cookies packed with dark chocolate and espresso powder, dipped in melted white chocolate and sprinkled with peppermint candies, are the perfect COMBO for the holidays.
I have made these cookies 3 times over the past week. Yes, 3 times! And I still cannot get over how delicious they are. Each bite is a combination of sweet, chocolatey, bitter, and minty. The flavor combo is out of this world. If you love peppermint mocha or hot chocolate, you would LOVE these cookies!
A FEW TIPS:
- BUTTER: Use soft unsalted butter for the best texture.
- COCOA POWDER: Dark cocoa powder or black cocoa powder both work for this recipe.
- ESPRESSO POWDER: You can substitute espresso powder with instant coffee. Keep in mind that espresso powder will result in stronger coffee flavor.
- PEPPERMINT EXTRACT: You can substitute peppermint extract with vanilla extract if a lighter peppermint flavor is desired.
- CRUSHED PEPPERMINT CANDIES: You can buy either peppermint candy cane or round peppermint candy
- WHITE CHOCOLATE: It is best to use white chocolate bark or high quality white chocolate for this recipe. Low quality white chocolate chips are inconsistent and tend to clump together. When melting white chocolate, make sure to place chocolate in a microwave safe bowl. Microwave in 20-sec intervals, stirring in between. Be careful that the bowl can be very hot!
- SPRINKLE: Chocolate dries really fast, so sprinkle the crushed peppermint candies as soon as you dip the cookies in the melted chocolate

Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs, room temperature
- 2 tsp peppermint extract
- 2 ½ cup all purpose flour
- ½ cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tbsp espresso powder or instant coffee powder
- 2 cups dark chocolate chips
- 1 ½ cup white chocolate bark or high quality white chocolate chips
- 10 peppermint hard candies, crushed
Instructions

In a large mixing bowl using an electric mixer with paddle attachment, beat butter and sugars together until creamy. Add eggs, one at a time and mix until well combined. Scrape the side of the bowl in between. Then add peppermint extract and mix until combined.

In a separate bowl, combine flour, cocoa powder, baking soda, salt, and espresso powder together.

Add dry ingredients (step 2) into the butter-egg mixture (step 1). Mix until just combined. Then fold in dark chocolate chips until evenly distributed.

Chill the cookie dough in the refrigerator for at least 1 hour.

Preheat the oven to 410°F. Line 2 baking sheets with parchment paper or grease with cooking spray.

Using a cookie or ice cream scoop, scoop the chilled dough onto the baking sheets, leaving about 2 inch apart.

Bake for 11-12 minutes. Transfer to the cooling rack and let cool completely.

For the coating, place white chocolate chips in a microwave safe bowl. Microwave in 20 sec intervals, stirring in between, until chocolate completely melted.

Dip half of the cookie into the melted white chocolate, then transfer the cookies onto a clean parchment paper. Repeat with the remaining cookies (melt more white chocolate if needed).

Sprinkle crushed peppermint candies on top. Enjoy!
Notes
Cookies can be stored in an air tight container for up to 5 days.
