This Overnight Pumpkin Spice French Toast Bake is the perfect Fall breakfast. It is easy to assemble and can be made ahead of time to feed a crowd during the holidays!
It feels weird celebrating holidays this year. Many cities are shut down and traveling is restricted. Family gatherings are forced to limit down to immediate family members who lives in the same household, which means less food for a smaller group of people. There is so much happening in this crazy world we live in, and more than enough issues to worry about. When it comes to food, sometimes we just need something delicious but without the hassle, don’t you agree?
I’m sharing my recipe for overnight pumpkin spice French toast casserole to help you save time during the holidays. Overnight French toast bake is one of my favorite things to make when I’m feeling lazy but want something fresh and delicious the next morning. Make this ahead of time of time and enjoy it for delicious breakfast or brunch with your loved ones.
WHAT YOU NEED:
- Bread: I used a loaf of brioche bread. Challah and French bread work too!
- Milk: Whole milk is best, but you can substitute with non-dairy milk
- Heavy Cream
- Eggs
- Pumpkin Puree: I used canned pumpkin puree. Feel free to use homemade puree!
- Sugar: White sugar for the batter, and brown sugar for streusel topping
- Spices: I used store bought pumpkin pie spice. You can make your own by mixing cinnamon, ginger, nutmeg, ground cloves, and all spice together.
- Vanilla Extract: Optional

This Overnight Pumpkin Spice French Toast Bake is the perfect Fall breakfast. It is easy to assemble and can be made ahead of time to feed a crowd during the holidays!
Ingredients
- 1 loaf brioche or French bread, diced
- 6 large eggs
- 2 cups milk of your choice
- ⅓ cup heavy cream
- 1 cup granulated sugar
- 1 cup pumpkin puree
- 1 tbsp vanilla extract
- 1 tbsp pumpkin pie spice
Streusel Topping
- ¾ cup all purpose flour
- ¾ cup brown sugar
- 2 tsp pumpkin pie spice
- ½ cup unsalted butter, cubed
Instructions

Grease a 9 x 13 inch baking pan with butter or spray it with cooking spray.

Dice bread into cubes and place them into the baking dish.

In a large bowl, whisk together eggs, milk, heavy cream, sugar, pumpkin puree, vanilla extract, and pumpkin pie spice. Pour the mixture evenly over the diced bread. Cover with plastic wrap and refrigerate at least 5 hours or better overnight.
Streusel Topping

In a medium size bowl, combine flour, brown sugar, and pumpkin pie spice. Using your hands, add the cubed butter and mix until small crumbs form.

Preheat the oven to 350°F.

Right before baking, sprinkle the streusel topping evenly over chilled french toast. Bake for 45-55 minutes.

Serve it with maple syrup, powdered sugar, chopped nuts, or fresh fruits. Enjoy!
Notes
Streusel topping can also be made ahead and refrigerate overnight.
