Heat a large skillet over medium-high heat and add a drizzle of oil. Add the minced garlic and grated ginger, then sauté for about 30 seconds until fragrant.
Add the ground beef and break it apart with a spatula. Cook for 5–6 minutes until browned and fully cooked,
Stir in the light soy sauce, dark soy sauce, oyster sauce, and sugar. Mix well until the beef is evenly coated.
Pour in the cornstarch slurry (1 tsp cornstarch mix with 2 tsp water) and stir continuously for 1–2 minutes until the gravy thickens into a glossy sauce. Add more cornstarch slurry if needed. Remove from heat and set aside.
Steam Egg Tofu
Heat a large nonstick pan or shallow pot over medium-low heat and add 1 tsp of neutral oil. Carefully place the silken tofu into the center of the pan. Optional: use a spatula to divide the tofu into 5 equal parts.
Slowly pour the beaten eggs evenly around and over the tofu.
Spoon the beef gravy over the top, covering the tofu evenly.
Cover with a lid and cook for 2–3 minutes, or until the eggs are just set while remaining soft and silky.
Garnish with chopped green onions and drizzle chili oil on top. Serve immediately by itself or over a bowl of steamed rice.
