High Protein Egg Tofu with Minced Beef Gravy

This Egg Tofu with Minced Beef is a quick, high-protein comfort meal with silky tofu, tender eggs, and savory beef gravy—all ready in just 15 minutes.

Ingredients
 

  • 1 silken tofu, (16 oz)
  • 2 large eggs, beaten
  • 1 lb ground beef, or you can use ground chicken, turkey, or lamb
  • 4-5 clove garlic, minced
  • 2 tsp ginger, grated
  • 2 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • neutral oil

Cornstarch Slurry

Garnish

  • Green onion, chopped
  • Chili oil, optional

Instructions
 

Make Beef Gravy

  • Heat a large skillet over medium-high heat and add a drizzle of oil. Add the minced garlic and grated ginger, then sauté for about 30 seconds until fragrant.
  • Add the ground beef and break it apart with a spatula. Cook for 5–6 minutes until browned and fully cooked,
  • Stir in the light soy sauce, dark soy sauce, oyster sauce, and sugar. Mix well until the beef is evenly coated.
  • Pour in the cornstarch slurry (1 tsp cornstarch mix with 2 tsp water) and stir continuously for 1–2 minutes until the gravy thickens into a glossy sauce. Add more cornstarch slurry if needed. Remove from heat and set aside.

Steam Egg Tofu

  • Heat a large nonstick pan or shallow pot over medium-low heat and add 1 tsp of neutral oil. Carefully place the silken tofu into the center of the pan. Optional: use a spatula to divide the tofu into 5 equal parts.
  • Slowly pour the beaten eggs evenly around and over the tofu.
  • Spoon the beef gravy over the top, covering the tofu evenly.
  • Cover with a lid and cook for 2–3 minutes, or until the eggs are just set while remaining soft and silky.
  • Garnish with chopped green onions and drizzle chili oil on top. Serve immediately by itself or over a bowl of steamed rice.
