Ingredients:
- Silken Tofu: it’s best to use silken tofu for the delicate texture. You can also use soft or medium tofu.
- Eggs
- Neutral Oil
- Ground Meat: I used ground beef in this recipe. You can also use ground chicken, pork, or turkey.
- Garlic and Ginger: adds flavor and aroma to the meat.
- Soy Sauce: I used both light soy sauce and dark soy sauce.
- Oyster Sauce
- Sugar
- Cornstarch

High Protein Egg Tofu with Minced Beef Gravy
Ingredients
- 1 silken tofu, (16 oz)
- 2 large eggs, beaten
- 1 lb ground beef, or you can use ground chicken, turkey, or lamb
- 4-5 clove garlic, minced
- 2 tsp ginger, grated
- 2 tbsp light soy sauce
- 2 tsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- neutral oil
Cornstarch Slurry
- 1 tsp cornstarch
- 2 tsp water
Garnish
- Green onion, chopped
- Chili oil, optional
Instructions
Make Beef Gravy
- Heat a large skillet over medium-high heat and add a drizzle of oil. Add the minced garlic and grated ginger, then sauté for about 30 seconds until fragrant.
- Add the ground beef and break it apart with a spatula. Cook for 5–6 minutes until browned and fully cooked,
- Stir in the light soy sauce, dark soy sauce, oyster sauce, and sugar. Mix well until the beef is evenly coated.
- Pour in the cornstarch slurry (1 tsp cornstarch mix with 2 tsp water) and stir continuously for 1–2 minutes until the gravy thickens into a glossy sauce. Add more cornstarch slurry if needed. Remove from heat and set aside.
Steam Egg Tofu
- Heat a large nonstick pan or shallow pot over medium-low heat and add 1 tsp of neutral oil. Carefully place the silken tofu into the center of the pan. Optional: use a spatula to divide the tofu into 5 equal parts.
- Slowly pour the beaten eggs evenly around and over the tofu.
- Spoon the beef gravy over the top, covering the tofu evenly.
- Cover with a lid and cook for 2–3 minutes, or until the eggs are just set while remaining soft and silky.
- Garnish with chopped green onions and drizzle chili oil on top. Serve immediately by itself or over a bowl of steamed rice.
