Not only are these cookies super easy to make, they are also very versatile. You can substitute white chocolate chips with any kind of chocolate chips, add in nuts, use raisins instead of dried cranberries, etc. Feel free to use what you have and experiment with different ingredients!

Adding orange zest is highly recommended but totally optional. Orange zest adds a hint of citrus flavor that bring these cookies to another level. It creates a subtle yet refreshing zing to the taste buds.

My go-to cookie recipe if I want something sweet, soft, chewy, and delicious! These thick cookies are packed with white chocolate, cranberries and oats in every bite.
Ingredients
- 1 1/2 cups all purpose flour
- 3 cups old fashioned oats
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter
- 1 1/2 cups brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup dried cranberries
- 1 cup white chocolate chips
- 1 orange zest (optional)
Instructions

In a large bowl, mix together flour, oats, baking powder, and salt.

In another bowl, beat together butter and brown sugar until creamy. Then beat in eggs and vanilla extract until well combined.

Pour the dry ingredients into the wet ingredients, and mix until just combined.

Stir in dry cranberries, white chocolate chips and orange zest.

Chill the dough in the refrigerator for about an hour. (give the dough some time to stay together)

While waiting for the dough to chill, preheat the oven to 400°F. Line a baking pan with parchment paper or grease it with cooking spray.

Use a cookie scoop to scoop the dough onto the baking sheet. You can also use your hand to roll the dough. About 6 cookies at a time.

Bake for 11-12 minutes or until golden brown.

Cool the cookies for 10 minutes. Then enjoy!
Notes
Cookies can be stored in an air tight container for up to 5 days.
Adding orange zest is highly recommended but totally optional.
Make sure you chill the dough for at least 1 hour, so the dough can hold together nicely and does not spread as much in the oven.
