I can't believe 2020 is finally coming to an end. What a year it's been. We've gone through more than we could've have ever imagined or predicted. We've almost made it, but not without a lot stress, fear, scars, frustration, and exhaustion. 2020 has certainly been a tough year, but it is also the year I appreciate everything I still have. Wherever you are, I hope you are able to spend more time with your loved ones, focus more on self-care, and remain safe and healthy.
I think it is reasonable enough to say that after what we've gone through this year, we all deserve to celebrate and start this new year off right. Even though we will be staying at home, New Year's Eve should still be a fun and fabulous night! Step up your cocktail game with this no-bake Champagne Panna Cotta, or what I called fancy adult jello shots!
TIPS:
- CHAMPAGNE or any sparkling wine or sparkling rose would work for this recipe.
- You can use any size and shape of cups/glasses you have. Keep in mind that the number of jello cups you make depends on the size of your cups.
- Make sure to allow each layer to set in the refrigerator. It takes at least 5 hours to set, so be patient!

Description
Start the New Year off right with this no-bake Champagne Jello topped with creamy vanilla panna cotta.
Ingredients
Champagne Jello Layer
- 1 cup champagne or any sparkling wine
- 2 ½ tsp (1 packet or 7g) powdered gelatin
- ¼ cup granulated sugar
Panna Cotta Layer
- ½ cup milk
- 2 ½ tsp (1 packet or 7g) powdered gelatin
- 1 cup heavy cream
- 2 tsp vanilla extract
- ⅓ cup granulated sugar
Optional
- corn syrup
- gold sprinkles
Instructions
Champagne Jello Layer

First take 2 tablespoon of champagne into a small bowl. Sprinkle gelatin on top and let it sit for 10 minutes.

Pour the rest of the champagne and sugar into a small pot over medium heat, stir until sugar completely dissolved. Then add gelatin mixture and stir until gelatin completely dissolved. Remove pot from heat and allow to cool for 10-15 minutes.

Pour the mixture into prepared cups. Divide the amount evenly into each cup/glass. Carefully transfer the cups into the refrigerator and chill until the jello is set (at least 5 hours).
Panna Cotta Layer

When the champagne jello is set, prepare vanilla panna cotta layer. Pour milk into a small bowl and sprinkle gelatin on top. Let it sit for 10 minutes.

In a small pot, heat heavy cream, vanilla extract, and sugar on medium heat, stir until sugar completely dissolved. Then add gelatin-milk mixture and continue stirring until gelatin completely dissolved. Remove from heat and allow to cool to room temperature.

Take the champagne jello cups out of the refrigerator. Carefully pour and divide panna cotta mixture into the cups. Transfer cups back to the refrigerator and chill until panna cotta layer is set (at least 5 hours).
Optional Sprinkles

Dip or brush the edges of the cups with corn syrup. Then dip the edges into a bowl of gold sprinkles. Refrigerate until ready to serve.
