Whenever I see pineapple fried rice on a restaurant menu, I have to get it. There is something about a simple fried rice placed in a pineapple bowl makes the dish looks fun and delicious! Pineapple fried rice is the perfect combination of sweet and savory. The pineapple chunks are always bursting with juiciness and sweetness, and add vibrant colors to the dish.
Pineapple Fried Rice is actually super easy to make at home. The best part is, you can use any protein and/or vegetables you like. Sometimes I like to use random leftovers I have in the fridge. It can easily be a very affordable and delicious meal on a weekday night!

INGREDIENTS:
- Rice
- Eggs
- Shrimp
- Garlic
- Vegetables, fresh or frozen
- Soy Sauce
- Fish Sauce
- Salt
- White Pepper
- Green Onion, for garnish
HOW TO MAKE PINEAPPLE FRIED RICE:
MAKE A PINEAPPLE BOWL
Cut the pineapple in half lengthwise, keep the leafy top intact. Then use a knife to cut the pineapple around the edges. Make sure you don't get too close to the edge or get too deep to the bottom. Use the knife to score the pineapple into cubes, then use a spoon to scoop out the pieces.
PREPARE EGGS AND RICE
Prepare 3 eggs. Separate the egg yolks from egg whites. Mix egg yolks with rice, until evenly coated. Set egg whites aside for later.
COOK PINEAPPLE FIRST
In a large cooking pan or wok, add pineapple cubes and cook over medium heat. Cook for a few minutes until the pineapple juice has dissolved. Remove pineapple from pan and set it aside.
COOK SHRIMP AND VEGETABLES
In the same cooking pan, add 2 tablespoon of oil. Add garlic and cook for 1 minutes until fragrant. Then add shrimp and cook until pink. Add vegetables and rice. Cook and stir constantly for a few minutes, while break the rice grain apart.
RICE AND EGG WHITE
Create a hole in the middle. Add egg whites, and stir fry for a few minutes until combined.
PINEAPPLE AND SAUCE
Add the pineapple cubes back into the pan. For the sauce, add soy sauce, fish sauce, salt, and pepper. Toss everything together until well combined.
Serve in a pineapple bowl, and garnish with green onions. Enjoy!

Ingredients
- 2 cups cooked cold rice (1 day old rice)
- Fresh pineapple, diced
- 3 large eggs, separate egg yolks from egg whites
- 0.5 lb shrimp
- 3 clove garlic, minced
- 1 cup vegetables, fresh or frozen
- 3 tbsp soy sauce
- 2 tbsp fish sauce
- ½ tsp salt
- ½ tsp white pepper
- green onion, for garnish
Instructions
- First, separate egg yolks from egg whites. In a large bowl, mix egg yolks and cold rice together. Set it aside.
- In a cooking pan or wok, add diced pineapples and cook until the juice has dissolved. Remove pineapple from pan and set it aside.
- In the same cooking pan, add 2 tablespoon of oil. Add garlic and cook for 1 minute, or until fragrant. Then add shrimp, and cook until pink. Add frozen vegetables and rice. Stir constantly and cook for a few minutes, while breaking the rice apart.
- Make a hole in the middle the rice and add egg whites. Stir-fry for a few minutes until combined. Then add pineapple cubes, soy sauce, fish sauce, salt and pepper. Toss everything together until well combined.
- Transfer fried rice into the pineapple bowl. Garnish with green onions. Serve and enjoy!
