Pineapple Fried Rice with Shrimps

Description

A quick and easy weeknight dinner – Pineapple fried rice combines the sweetness of pineapple with savory ingredients and fragrant spices.


Ingredients

  • 2 cups cooked cold rice (1 day old rice)
  • Fresh pineapple, diced
  • 3 large eggs, separate egg yolks from egg whites
  • 0.5 lb shrimp
  • 3 clove garlic, minced
  • 1 cup vegetables, fresh or frozen
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • green onion, for garnish

Instructions

  1. First, separate egg yolks from egg whites. In a large bowl, mix egg yolks and cold rice together. Set it aside. 
  2. In a cooking pan or wok, add diced pineapples and cook until the juice has dissolved. Remove pineapple from pan and set it aside.
  3. In the same cooking pan, add 2 tbsp of oil. Add garlic and cook for 1 minute, or until fragrant. Then add shrimp, and cook until pink. Add frozen vegetables and rice. Stir constantly and cook for a few minutes, while breaking the rice apart.
  4. Make a hole in the middle the rice and add egg whites. Stir-fry for a few minutes until combined. Then add pineapple cubes, soy sauce, fish sauce, salt and pepper. Toss everything together until well combined. 
  5. Transfer fried rice into the pineapple bowl. Garnish with green onions. Serve and enjoy!
