A quick and easy weeknight dinner – Pineapple fried rice combines the sweetness of pineapple with savory ingredients and fragrant spices.

- 2 cups cooked cold rice (1 day old rice)
- Fresh pineapple, diced
- 3 large eggs, separate egg yolks from egg whites
- 0.5 lb shrimp
- 3 clove garlic, minced
- 1 cup vegetables, fresh or frozen
- 3 tbsp soy sauce
- 2 tbsp fish sauce
- 1/2 tsp salt
- 1/2 tsp white pepper
- green onion, for garnish
Instructions
- First, separate egg yolks from egg whites. In a large bowl, mix egg yolks and cold rice together. Set it aside.
- In a cooking pan or wok, add diced pineapples and cook until the juice has dissolved. Remove pineapple from pan and set it aside.
- In the same cooking pan, add 2 tbsp of oil. Add garlic and cook for 1 minute, or until fragrant. Then add shrimp, and cook until pink. Add frozen vegetables and rice. Stir constantly and cook for a few minutes, while breaking the rice apart.
- Make a hole in the middle the rice and add egg whites. Stir-fry for a few minutes until combined. Then add pineapple cubes, soy sauce, fish sauce, salt and pepper. Toss everything together until well combined.
- Transfer fried rice into the pineapple bowl. Garnish with green onions. Serve and enjoy!
