Buttery and crispy almond cookies are the perfect treats for Chinese New Year.
Chinese New Year is almost here so I thought I’d share this simple and traditional Chinese pastry with you. Chinese almond cookies are shaped like coins and were thought to bring good fortune. If you are having Chinese New Year celebration this weekend, these cookies make the perfect gift for your friends and family!
These almond cookies remind me of buttery shortbread cookies. The combination of almond flour and extract create a strong and distinctive almond flavor. There are many ways to make Chinese almond cookies. This recipe gives you a more buttery, dense and dry texture. These cookies have a subtle hint of sweetness and they are perfect to enjoy with a cup of tea or coffee.
HOW TO MAKE CHINESE ALMOND COOKIES
WHAT YOU’LL NEED:
- Cake Flour
- Almond Flour
- Salt
- Unsalted Butter, room temperature
- 1 Large Egg Yolk
- Granulated Sugar
- Almond Extract
- Raw Almonds
WET INGREDIENTS
Using an electric mixer, cream together unsalted butter, egg yolk, sugar, and almond extract in a bowl.
DRY INGREDIENTS
In a separate bowl, sift together cake flour, almond flour, and salt.
MIX
Gradually mix the dry ingredients into the wet ingredients. Form the mixture into a dough disk, then wrap the dough and refrigerate for at least 2 hours.
SHAPING COOKIES
Take the chilled dough out of the refrigerator, then divide the dough into 15 equal parts. Roll each dough into a ball and place them onto a baking sheet lined with parchment paper. Press a raw almond into the center of each cookie dough. The harder you press on the cookie, the more cracks you’ll create around the edges. (Option: brush the cookies with egg wash)
BAKE
Bake for 18-20 minutes at 350°F, and now you’ll have 15-20 beautiful golden almond cookies. Hopefully they’ll bring you good luck for the entire year!

Form the mixture into a dough disk. Then wrap the dough tightly with plastic wrap. Refrigerate for at least 2 hours.

Preheat the oven to 350°F. Line a baking sheet with parchment paper or grease it with cooking spray.

Take the chilled dough out of the refrigerator. Divide the dough into 15 equal parts. Roll each dough into ball shape and place it on the baking pan.

Press a raw almond into the center of each cookie dough. No need to press too hard. The harder you press, the more crack you’ll create around the edges.

Bake for 18-20 minutes or until the edges are golden brown.

Let cool for 15 minutes before serving. Enjoy!
Notes
Cookies can be stored in an air tight container at room temperature for up to 5 days.
