  • ½ lb ground pork, *See Note 2
  • ½ lb ground chicken
  • 5 clove garlic, minced
  • 2 tsp ginger, minced
  • 2 scallion, chopped, separate white and green parts
  • 2 tbsp Shaoxing wine
  • ½ cup sweet bean sauce , or sweet flour sauce
  • 2 tbsp fermented soy bean paste
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 cup water, or chicken broth
  • 1 cucumber, julienned, for garnish

Instructions

Cook the Noodles

  • Bring a pot of water to a boil. Add noodles into the boiling water and cook according to package instructions. If you are using GloryLand Brown Rice & Millet Noodles, the boiling time takes 4 minutes.
  • Transfer the cooked noodles to a bowl of ice water or rinse them under running cold water to stop the cooking. Drain noodles and set aside.

Make the Meat Sauce

  • In a bowl, add sweet bean sauce, soy bean sauce, light soy sauce, dark soy sauce, and water/broth. Whisk everything together until well combined. Set aside.
  • Heat 1 tbsp of cooking oil in a wok or pan over medium heat. Add garlic, ginger, and white parts of scallion, sauté for 30-60 seconds until fragrant.
  • Add ground pork and ground chicken. Break them into little pieces and stir-fry until browned and crumbly.
  • Add Shaoxing wine and cook until the water has evaporated.
  • Stir in the pre-mixed sauce and bring it to a simmer. Let it simmer for 8-10 minutes, or until the sauce has thickened.

To Serve

  • Divide the noodles into 4 separate bowls. Ladle the meat sauce generously over the top. Garnish with cucumber and green onion. Mix everything together and serve immediately.
