Instructions
Make Sushi Rice (skip this step if you are using cooked white rice or brown rice)
Cook sushi rice according to package instructions.
Add cooked rice to a bowl along with rice vinegar, sugar, and pinch of salt. Mix until well combined.
Make Spicy Shrimp Hand Rolls
In a bowl, combine chopped shrimp, Kewpie mayo, sriracha, and green onion. Mix well.
Place half a nori sheet on a flat surface. Add about 1-2 tbsp of rice, then top with cucumber, avocado, carrots, and clover sprouts.
Top with a spoonful of spicy shrimp mixture.
Starting from the filling side, roll the nori into a corn shape. Use a grain of rice or a dab of water to seal the edge if needed.
Sprinkle with sesame seeds and serve immediately. Enjoy!
