In a pot, heat 1 tbsp of cooking oil over medium high heat. Add garlic and sauté until fragrant.
Add coconut milk, chicken stock, peanut butter, soy sauce, rice vinegar, fish sauce, sugar, and chili flakes. Stir until combined and bring the sauce to a simmer.
Add frozen soup dumplings to the sauce. Don't overcrowd the dumplings.
Cover the pot with a lid and cook for about 12 minutes, or until the dumplings are cooked through.
Remove the lid and turn off the heat.
Garnish with crushed peanuts and chopped green onions. Drizzle some chili oil on top. Serve hot immediately and enjoy!
