Soup Dumplings in Satay Sauce

Ingredients
 

  • 8-10 frozen soup dumplings
  • 1 tbsp cooking oil
  • 3 clove garlic, minced
  • ½ cup coconut milk
  • ½ cup chicken stock
  • 3 tbsp creamy peanut butter
  • 1 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 1 tsp chili flakes, optional
  • 1 tbsp crushed peanuts, for garnish
  • 1 green onion, chopped, for garnish
  • 1 tbsp chili oil, optional

Instructions
 

  • In a pot, heat 1 tbsp of cooking oil over medium high heat. Add garlic and sauté until fragrant.
  • Add coconut milk, chicken stock, peanut butter, soy sauce, rice vinegar, fish sauce, sugar, and chili flakes. Stir until combined and bring the sauce to a simmer.
  • Add frozen soup dumplings to the sauce. Don't overcrowd the dumplings.
  • Cover the pot with a lid and cook for about 12 minutes, or until the dumplings are cooked through.
  • Remove the lid and turn off the heat.
  • Garnish with crushed peanuts and chopped green onions. Drizzle some chili oil on top. Serve hot immediately and enjoy!
