Japchae - Healthy Korean Glass Noodles Recipe (Video)

Japchae is a tasty Korean noodle dish made with glass noodles and colorful vegetables. It has a soft, chewy texture and a slightly sweet flavor. This recipe brings together the perfect balance of sweet and savory.

  • Cook glass noodles according to package instructions. Drain, rinse in cold water and set it aside. Cut the noodles with a pair of scissors a few times.
  • In a bowl, whisk 2 eggs. Add 1 tsp of oil to a heated pan. Pour the egg into the pan, tilt it around so the egg spreads thinly. Let it cook for about 1 minute, flip over and cook for another minute. Let it cool and chop it into thin strips. Set it aside.
  • In a cooking pan, heat oil over medium-high heat. Saute the carrots sand bell pepper for 3-4 minutes, or until softened. Remove from the pan.
  • Add more oil and saute onion, mushroom, garlic, and green onion until softened. Then add spinach and salt, and stir fry until it begins to wilt. Remove from the pan.
  • In the same pan, combine soy sauce, sesame oil, brown sugar, and black pepper. Once the sugar dissolves, add the cooked noodles and toss to coat evenly with the sauce. Add the vegetables and egg strips back in and toss everything together until well combined.
  • Sprinkle sesame seeds on top. Serve and enjoy!
