Japanese Chicken Curry in Rice Cooker (VIDEO)

An easy Japanese curry made in the rice cooker—rich, comforting, one-pot, and perfect for a cozy homemade meal with minimal effort.

Ingredients
 

  • 2 chicken thighs, boneless, cut into bite-sized pieces
  • ½ large onion, cut into chunks
  • 2 carrot, peeled and cut into chunks
  • 2 potatoes, peeled and cut into chunks
  • 2 medium-sized tomatoes
  • 4 Japanese curry roux cubes, 4-5 oz
  • 1 ½ cup water
  • Rice, for serving
  • sesame seeds, for garnish

Instructions
 

  • In the rice cooker pot, add chicken, onion, carrots, potatoes, tomatoes, curry roux, and water.
  • Close the lid, select the Standard or White Rice setting, and press start.
  • When it's done, gently break the tomatoes apart and stir until the sauce is smooth, thick, and well combined.
  • Serve it over rice or noodles. Garnish with sesame seeds and enjoy!
