Finely chop the shrimp into little pieces.
In a bowl, combine minced shrimp, garlic, green onion, salt, white pepper, sugar, garlic powder, and cornstarch. Mix until pasty and sticky.
Remove the crust from the bread. Then add a generous amount of shrimp filling onto each bread slice. Spread evenly to smooth it out. Then place another bread on top and gently press them together.
Preheat the oven to 400F.
Place the shrimp toast in the air fryer basket and spray generously with cooking spray on both sides.
Air fry for 10 minutes, flipping them halfway, until golden brown and shrimp is cooked through.
For the dipping sauce, mix Kewpie mayo and sriracha together until well combined. Serve the shrimp toast immediately with dipping sauce and enjoy!
