Taiwanese Dan Bing is a savory breakfast pancake or crepe filled with egg, scallions, and optional meats or cheese—crispy, chewy, and packed with flavor in every bite.
In a bowl, add flour, tapioca starch, cornstarch, salt, and water. Whisk together until smooth. Then stir in chopped green onions. The consistency should be like a thin pancake batter.
Heat a non-stick pan with cooking oil over medium heat. Pour a ladle of batter in the pan and swirl in a circular motion to coat the bottom evenly, like a thin crepe. Cook for 1-2 minutes until. Flip over and cook the other side for another 1-2 minutes. Transfer the cooked pancake to a plate and set aside.
Whisk two eggs in a bowl. Pour the eggs in the same pan. While the egg is still slightly runny, place the pancake on top of the egg and cook for 1-2 minutes until set.
Flip the egg pancake combo over so now the egg side is facing up. Add shredded cheese and ham slices, or any of your preferred toppings.
Use a spatula to fold the dan bing. Transfer to a cutting board and cut into small pieces. Drizzle with sweet soy sauce, chili sauce, or your favorite sauce on top. Serve immediately and enjoy!
