WHAT IS THAI GREEN CURRY?
Thai green curry is a vibrant and aromatic dish made with coconut milk, green chilies, and fragrant herbs like cilantro, basil, lemongrass, and kaffir limes leaves. It has the perfect balance of heat, sweetness, and tanginess. Thai green curry has a fresher and more aromatic flavor than red curry. You can usually find it with tender chicken, shrimp, or tofu, along with veggies like bamboo shoots or bell peppers, all simmered in that rich and fragrant sauce. Often served over rice, Thai green curry is a bold and flavor-packed dish that is both delicious and addicting!
WHERE DO I FIND GREEN CURRY PASTE?
You can make your own green curry paste, or use store bought curry paste. Here in this recipe, I used Maesri Green Curry Paste, which you can find in any Asian grocery store or on Amazon US.
HOMEMADE WONTONS
Making wontons at home is easier than you might think! Although you can certainly use store bought wontons in this recipe, I highly recommend making your own wontons at home! Homemade wontons are fresher, more flavorful, and you can customize the filling to your liking.

INGREDIENTS:
- Wontons (Homemade or store bought)
- Bok Choy, or your choice of veggie
- Cooking Oil
- Garlic
- Ginger
- Thai Green Curry Paste
- Chicken Stock
- Coconut Milk
- Fish Sauce
- Light Brown Sugar
- Kaffir Lime Leaves
- Red Bell Pepper
- Thai Basil
- Garnish: green onions, Thai red chili pepper, fresh basil
HOW TO MAKE THAI GREEN CURRY WONTON SOUP:
Sauté the Aromatics
In a pan or pot, add 1 tablespoon of cooking oil over medium heat. Add minced garlic and ginger, and sauté until fragrant. Then add Thai green curry paste and stir-fry for 1-2 minute.
Make the Curry Broth
Add chicken broth, coconut milk, fish sauce, brown sugar, and kaffir lime leaves. Bring the curry broth to a simmer.
Add chopped red bed pepper and cook until soft. Then toss in a handful of fresh Thai basil. Turn off the heat and set the curry soup aside.
Boil Wontons and Veggies
Bring a pot of water to a boil, then add wontons. Stir gently with a spatula or spoon. Cook until wontons are floating to the top, about 4-5 minutes. At the last minute, throw in bok choy and cook until tender.
Garnish and Serve
Transfer cooked wontons and veggies to a bowl. Then pour green curry soup over the wontons. Garnish with chopped green onions, Thai red chili pepper, and more basil. Serve hot and enjoy!

- 16-18 wontons (homemade or store bought)
- bok choy, or your choice of veggie
- 1 tbsp cooking oil
- 3 clove garlic, minced
- 2 tsp ginger, minced
- 2 tbsp Thai green curry paste
- 2 cups chicken stock

- 2 tsp fish sauce
- 2 tsp light brown sugar
- 2 kaffir lime leaves, torn
- ½ red bell pepper, chopped
- handful of Thai basil
