Garlic Ginger Chicken Soup (boost immunity)

Description

This comforting and immune boosting chicken soup is full of garlic, ginger, and goji berries. It is the perfect soup to make during cold weather or when you are feeling sick.


Ingredients

Scale
  • 2lb Chicken thigh (bone-in), or chicken leg
  • 30 cloves garlic, peeled
  • 5 inch knob ginger, peeled and sliced
  • 2 green onion, chopped
  • 1/4 cup Goji berries
  • 3 tbsp cooking wine
  • 1 tsp salt (add more to taste)
  • Water

Instructions

  1. Blanch Chicken: Add chicken and cold water to a large pot. Make sure the chicken is fully submerged. Bring the water to a boil and and let it cook for about 3-4 minutes, until the chicken is partially cooked. Turn off heat. Remove chicken from the pot and set it aside.
  2. In a large pot, heat 2 tbsp of cooking oil over medium heat. Add peeled garlic and sliced ginger, cook until aromatic (about 3 minutes).
  3. Add blanched chicken to the pot. Then add water until the chicken is fully submerged. 
  4. Bring the soup to a boil, then reduce heat to low. Cover the pot with a lid and let it simmer for about 40 minutes. 
  5. After 40 minutes, remove the lid and add goji berries and cooking wine to the soup. Cook for another 5 minutes. Then add 1 tsp of salt. Taste and add more salt if you’d like.
  6. Turn heat off. Add chopped green onion. Serve hot and enjoy!
