This comforting and immune boosting chicken soup is full of garlic, ginger, and goji berries. It is the perfect soup to make during cold weather or when you are feeling sick.
Whenever I get sick or feel under the weather, my mom would make me a big bowl of chicken soup. She would slowly simmer the soup with lots of garlic, ginger, and fresh herbs. The aroma of the chicken broth is always so comforting and would instantly make me feel better. Her chicken soup was not just food, it was her love language. Now as an adult, I would do the same for myself and my loved ones. There is nothing like a warm, soothing bowl of soup to calm the soul and heal the body.
This garlic ginger chicken soup is full of healthy ingredients with immune boosting and anti-inflammatory properties. The aromatic blend of garlic, ginger, chicken, scallions, and goji berries not only create a wonderful flavor but also offers many health benefits.
SO MANY HEALING INGREDIENTS:
- Bone-in chicken thighs or drumsticks
- Garlic
- Ginger
- Scallion
- Goji Berries
- Cooking Wine
- Salt
- Water
DIRECTIONS
BLANCH CHICKEN: I like to blanch chicken meat before using it to make stock or broth. Blanching chicken helps remove fat and other impurities. Add chicken and cold water to a large pot. Make sure the chicken is fully submerged. Bring the water to a boil and and let it cook for about 3-4 minutes, until the chicken is partially cooked. Turn off heat. Remove chicken from the pot and set it aside.
COOK GARLIC AND GINGER: In a large pot, heat 2 tablespoon of cooking oil over medium heat. Add peeled garlic and sliced ginger, cook until aromatic (about 3 minutes).
ADD CHICKEN AND WATER: Add blanched chicken to the pot. Then add water until the chicken is fully submerged.
SIMMER: Bring the soup to a boil, then reduce heat to low. Cover the pot with a lid and let it simmer for about 40 minutes.
ADD GOJI BERRIES, WINE AND SALT: Remove the lid and add goji berries and cooking wine to the soup. Cook for another 5 minutes. Then add 1 teaspoon of salt. Taste and add more salt if you'd like.
GARNISH: Lastly, add green onion. Turn the heat off. Serve hot and enjoy!

- 2lb Chicken thigh (bone-in), or chicken leg
- 30 cloves garlic, peeled
- 5 inch knob ginger, peeled and sliced
- 2 green onion, chopped
- ¼ cup Goji berries
- 3 tbsp cooking wine
- 1 tsp salt (add more to taste)
- Water
