WHAT ARE DAN DAN NOODLES?
Dan dan noodles are one of the most famous dish from Sichuan. Over the years, there are many variations of dan dan noodles in the West. Traditionally, these noodles have 3 major components - thin noodles, crispy fried pork, and spicy sesame sauce made from Sichuan peppercorns. This dish gets its name from the bamboo pole (dan dan) that Sichuan street vendors used to carry their ingredients, cooking equipment, and serving utensils. Dan dan noodles offers a bold flavor profile with a balance of spicy, salty, and savory.

INGREDIENTS:
- Noodles
- Boy Choy, or vegetables of your choice
- Peanuts
- Green Onion
- Sesame Seeds (for garnish)
- Ground Pork
- Garlic
- Chili Bean Sauce (doubanjiang)
- Soy Sauce
- Black Vinegar
- Cooking Wine
- Salt
- Five Spice Powder
- ChineseSesame Paste
- Chili Oil
- Ground Sichuan Peppercorn
DIRECTIONS:
Prepare Pork Toppings
In a large pan or wok, heat oil over medium-high heat. Then add garlic, ground pork, chili bean sauce, soy sauce, cooking wine, salt, and five spice powder. Mix and stir fry until the liquid has evaporated and the pork turns a deep brown color. Remove from the stove and set it aside.
Prepare Noodles and Vegetables
Cook the noodles according to package instructions. Reserve about ¼ cup of hot water and set it aside to add to the sauce later. 30 seconds before you drain the noodles, add and blanch some veggie until soft. Drain both noodles and veggie, and set it aside.
Prepare the Sauce
In a bowl, combine sesame paste and ¼ cup reserved noodle water. Whisk until smooth. Then add soy sauce, black vinegar, minced garlic, chili oil, and ground sichuan peppercorn. Mix until well combined.
Assemble the Bowl
Add the sesame sauce to the bottom of the noodle bowl. Next, add noodles then top with veggie, crispy pork topping, crushed peanuts, chopped green onion, and sesame seeds. Serve hot and enjoy!

Ingredients
Pork Topping:
- ½ lb ground pork
- 4 clove garlic, minced
- 1 tbsp chili bean sauce (doubanjiang)
- ½ tbsp soy sauce
- ½ tbsp cooking wine or Shaoxing wine
- ½ tsp salt
- ½ tsp five spice powder
Sesame Sauce
- 1 tbsp Chinese sesame paste
- ¼ cup hot water (reserved from noodle water)
- 1 tbsp soy sauce
- 1 tsp black vinegar
- 2 clove garlic, minced
- few drops chili oil
- 2 tsp ground Sichuan peppercorn
Noodles and Garnish
- Noodles (4 servings)
- Baby Bok Choy, or other vegetables of your choice
- Peanuts, crushed or finely chopped
- Green onion, chopped
- White Sesame Seeds (optional), for garnish
Instructions
Prepare Pork Topping:
- In a large skillet or wok, heat 1 tablespoon oil over medium-high heat. Add minced garlic, ground pork, chili bean sauce, soy sauce, cooking wine, salt and five spice powder.
- Mix and stir fry until liquid has evaporated and the pork turns a deep dark brown color.
- Remove from the stove, transfer the pork to a plate and set it aside.
Prepare Noodles and Vegetables:
- In a pot, cook the noodles in hot boiling water according to package instructions.
- Reserve about ¼ cup of hot water and set it aside. You will add this hot water to the sauce later.
- Right before draining the noodles, add your vegetables and blanch for 30 seconds. Drain both noodles and vegetables. Set it aside.
Prepare the Sauce
- In a bowl, add sesame paste and hot water (reserved from noodle water). Whisk until smooth.
- Then add soy sauce, black vinegar, minced garlic, chili oil, and ground Sichuan peppercorn. Whisk until well combined. Add more chili oil if you like more heat.
Assemble the Bowl:
In a bowl, add spicy sesame sauce. Then add noodles and top with vegetables, crispy pork topping, crushed peanuts, chopped green onion, and sprinkle with sesame seeds. Serve hot and enjoy!
