In my family, soup is believed to have restoring power. This is my grandma’s golden chicken soup without a single drop of water—a recipe passed down through generations as a healing remedy. With no water added, the broth comes entirely from the chicken and vegetables themselves, slowly releasing their essence as they cook. The result is liquid gold: incredibly rich, deeply savory, and intensely concentrated.

I remember my grandma would only make this soup when someone was really sick or in recovery. It wasn’t an everyday meal—it was something special.   • Ultra-concentrated version: Use only the whole chicken with ginger and goji berries for a deeply intense chicken essence. *Note that you will yield approximately 1 of chicken essence with just the chicken alone.
  • Add Water or Chicken Stock if you prefer more less concentrated liquid.

How to Storage and Reheat

To Store: store in an airtight container in the refrigerator for up to 3-4 days.

To Reheat: reheat gently on stovetop over medium heat, or microwave until warm.

Top Tips for Success

Use a tight-fitting lid and low heat.
This is the most important step. A snug lid traps steam inside the pot, allowing the chicken and vegetables to slowly release their natural juices. Low, gentle heat prevents evaporation and scorching, resulting in a rich, concentrated broth.

Choose a good-quality whole chicken.
Since no water is added, the flavor of this soup depends entirely on the chicken. A fresh, good-quality chicken will produce a cleaner, richer chicken essence.

Do not stir the soup.
Stirring isn’t necessary and can break up the vegetables, making the broth cloudy. Let everything cook undisturbed for the clearest, most golden soup.

Cut vegetables into large pieces.
Large chunks release moisture slowly and help prevent the soup from becoming too diluted too quickly.

Be patient and let time do the work.
This soup is meant to cook slowly. Rushing it with high heat will cause the liquid to evaporate and can burn the ingredients.

Season lightly, if at all.
Traditionally, this soup is enjoyed without much seasoning so the natural chicken essence can shine. Add salt and white pepper at the end, then taste to adjust.

Serve it warm and sip slowly.
This soup is meant to be savored. A small bowl is often enough because of how rich and concentrated it is.

Chicken Essence Soup (No Water Added)

A deeply nourishing chicken essence soup made with no water added—rich, concentrated, and traditionally enjoyed as a healing remedy for recovery and strength.

Ingredients
 

  • 1 whole chicken , about 3lbs
  • 6 pieces napa cabbage, roughly chopped
  • 1 carrot, sliced or cut into large chunks
  • 1 onion, sliced or quartered, optional
  • 4 cloves garlic, lightly smashed
  • 8-10 slices fresh ginger
  • 2 tablespoon dried goji berries
  • 1-2 cups water or chicken stock, (optional) add this only if you prefer less concentrated liquid
  • ½ tsp salt, add more to taste
  • ½ tsp white pepper, add more to taste

Instructions
 

  • Rinse the whole chicken thoroughly and pat dry. Prep and cut the vegetables.
  • In a large cooking pot or dutch oven, layer the cabbage, carrot, onion, garlic, and ginger. Then place the whole chicken on top, along with more ginger slices and goji berries.
  • Then place the whole chicken on top, along with more ginger slices and goji berries. Do not add any water – this soup relies entirely on the natural juices released from the chicken and vegetables. If you prefer more liquid, feel free to add 1-2 cups of water or chicken stock.
  • Cover the pot tightly with a lid and place it over low to medium-low heat. Let the soup slowly cook for 1½ to 2 hours.
  • Once the soup is done and the broth looks rich and concentrated, turn off the heat and let it sit for another 10 minutes.
  • Taste and add salt and white pepper if desired. Serve warm and enjoy!

Notes

*NOTE: This recipe yields about 2-4 cups of chicken essence. The amount of essence liquid can vary depending on the size of your chicken, amount of vegetables, and the type of pot you are using. If you prefer more liquid or less concentrated, feel free to add 1-2 cups of water or chicken stock. The chicken soup will be just as tasty and nourishing!
