Chow Mein is a term derived from the Chinese word “炒麵”, which translates to “stir-fried noodles.” The word “chow 炒” means “stir-fry,” and “mein 麵” means “noodles.” This dish typically consists of chewy noodles stir-fried with different vegetables, choice of protein, and a savory sauce. Chow mein is easy to prepare and highly customizable, making it a popular Chinese take-out option. You can use any vegetables you have in the fridge. If you don’t like chicken, you can substitute with beef, shrimp, tofu, or a mix of different proteins that suit your preference!

WHAT KIND OF NOODLES TO USE FOR CHOW MEIN?
In this recipe, I used parboiled chow mein noodles that can be found at any Asian grocery store. I love using parboiled noodles because they can be used straight from the bag without boiling them first. If you can’t find chow mein noodles at your local store, you can also find in on Amazon.
If you can’t find chow mein noodles, thin egg noodles, spaghetti, or even ramen noodles can be a good substitute.
INGREDIENTS:
- Chow mein noodles
- Chicken breast or chicken thigh
- Yu Choy or Bok Choy, or any vegetable of your choice
- Carrots
- Onion
- Red Bell Pepper
- Green Onion
- Bean Sprouts
- Garlic
- Ginger
- Light Soy Sauce
- Dark Soy Sauce
- Shaoxing Wine
- Oyster Sauce
- Sesame Oil
- Sugar
- Salt
- White Pepper
- Cornstarch
HOW TO MAKE CHICKEN CHOW MEIN:
Marinate the Chicken
In a bowl, combine chicken, soy sauce, Shaoxing wine, salt, white pepper, and cornstarch. Mix well and set it aside. Let it marinate for about 15 minutes.
Prepare the Sauce
While the chicken is marinating, prepare the sauce. In a bowl, combine light soy sauce, dark soy sauce, Shaoxing wine, oyster sauce, sesame oil, sugar, and water. Whisk together and set it aside.
Stir-Fry the Chicken
In a pan or wok, add 2 tbsp of oil and heat over medium-high heat. Add the marinated chicken and stir-fry until chicken is brown. Transfer the cooked chicken to a plate and set it aside.
Sauté the Vegetables
In the same pan, add 2 more tbsp of oil. Add garlic and ginger, and sauté until fragrant. Then add yu choy, carrot, onion, red bell pepper, and green onions. Sauté until all the vegetables are soft.
Add Noodles
Add cooked noodles to the pan and stir-fry for about 1-2 minutes.
Add Chicken, Bean Sprouts, and Sauce
Transfer cooked chicken back to the pan. Add bean sprouts and stir-fry for another 1-2 minutes. Pour the sauce on top of the noodles. Toss everything together until well combined.
Taste the chow mein and add more salt and white pepper if needed. Serve hot and enjoy!

Noodles
- Chow mein noodles
Marinade Chicken
- 1/2 lb chicken thigh or chicken breast
- 1 tbsp soy sauce
- 1 tsp oyster sauce
- 1 tbsp Shaoxing wine
- 1/4 tsp salt
- 1/4 tsp white pepper
- 2 tsp cornstarch
- 1 tsp oil
Vegetables
- 4 clove garlic, minced
- 1 tbsp ginger, minced
- handful of yu choy, or 2 cups of any vegetables
- 1 carrot, julienned
- 1/2 onion, thinly sliced
- 1 bell pepper, sliced
- 4 green onions, chop into 2” long pieces
- 2 cups bean sprouts
Sauce
- 2 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp water
- 1 tbsp Shaoxing wine
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tsp sugar
Instructions
1. Marinade the Chicken

2. Prepare the Sauce

5. Add Noodles
Add cooked noodles to the pan and stir-fry for about 1-2 minutes.
6. Combine with Sauce
Transfer cooked chicken back to the pan. Add bean sprouts and stir-fry for another 1-2 minutes. Pour the sauce on top of the noodles. Toss everything together until well combined. Taste the chow mein and add more salt and white pepper if needed. Serve hot and enjoy!
