These chewy chai spiced oatmeal cookies are loaded with cinnamon, ginger, nutmeg, ground cloves, all spice, cardamom, and black pepper. Perfect cookies to cozy up with a cup of tea!
I can't believe it's September already! As the temperature in California still being in the 90s, it definitely does not feel like Fall. However, I love everything Fall, so I'm not complaining about starting to see pumpkin and apple cider everywhere.
Whenever I think of Fall and Winter, I think of snuggling under a cozy blanket by the fireplace and sipping on warm spiced tea. I especially crave hot Chai Tea in the cold seasons. All the aromatic spices create such comforting and relaxing vibes, and make the house smell better than a candle store.
What is Chai?
Originated from India, "chai" is the Hindi word for "tea." Traditional chai relies heavily on a mix of spices to give it its flavor. Recipe for chai beverages can vary across towns, cultures, and family. But the traditional ingredients typically include: black tea, cinnamon, cardamom, ground cloves, ginger, and black pepper. For serving, chai tea is typically brewed with milk and sweetened with sugar or honey.
Depending on the spices used, chai tea can have different aromas and flavors. For this recipe, I incorporated some of the classic chai spices to the cookies, giving them its full-bodied, sweet vanilla and cinnamon flavor with a kick of spiciness from ginger and black pepper.
NOTES:
- Use Old Fashioned Oats - instant or quick oats can absorb too quickly and end up with a batch of dry and flat cookies.
- Sugars - using both granulated sugar and brown sugar will yield soft and chewy texture with dark caramel color.
- Salt - Adding salt balances out the sugars and spices.
- Spices: I used a lot of spices in this recipe. I understand that not everyone has all the listed ingredients in their pantry. Feel free to experiment with different spices. Whatever you do, I would not recommend taking out cinnamon, ground cloves, and ginger.
- Walnuts - optional but recommended. You can also add other nuts of your choice, raisin, dried cranberries, etc.
- Storing - These cookies can be stored in an air tight container for up to 5 days and will still be soft and chewy.

Ingredients
- 1 cup unsalted butter, room temperature
- 1 ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla
- 1 ½ cup all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 3 cups old fashioned oats
- 1 cup chopped walnuts (optional)
Spices
- 2 tsp cinnamon
- 1 tsp ground ginger
- ½ tsp all spice
- ½ tsp ground cloves
- ½ tsp nutmeg
- ½ tsp black pepper
- 1 tsp cardamom (optional)
Instructions

Preheat the oven to 350°F. Line baking sheets with parchment paper or grease it with cooking spray.

In a large mixing bowl, use a handheld or standing electric mixer and beat butter and sugars together until creamy. Then add eggs and vanilla, and mix until well combined.

In a separate bowl, mix together flour, baking soda, salt, and all the spices.

Add the dry ingredients into the wet ingredients. Mix until well combined.

Stir in old fashioned oats and walnuts.

Divide the dough into 1½ tablespoon sized balls and drop them onto prepared baking sheets. Leave 2-inch space between each cookie dough.

Bake for 10-12 minutes, or until cookies turn golden brown. Let cool for 10 minutes. Enjoy!

These were very good. Not an over powering amount of spice and definitely getting good chai flavor in the cookies. Mine did not get as golden on top but they did brown nicely on the bottom and didn’t spread too much.

Question rather than comment.
I have a chai spice mix. I can’t imagine putting 6 tsp in this recipe. I barely put a quarter tsp in my latte drink. What do you recommend?

Hi, different chai spice brand contain different amount of spices. I would recommend looking at the ingredients of your chai spice mix first, and then decide how much you would want to reduce. If you only put 1/4 tsp in your latte milk, it sounds like your spice mix is pretty strong. I would recommend adding 2tsp or 3 tsp into the cookie batter first and see how you like them!
