Beef Yaki Udon is a quick, easy, and delicious meal that is perfect for a weeknight dinner. It combines tender beef slices, chewy udon noodles, and healthy vegetables in a savory sauce.

- 2 pack frozen udon noodles
- 0.5 lb beef sirloin, sliced
- 1/2 onion, sliced
- 1 carrot, sliced
- 5 Napa Cabbage leaves, chopped
- 2 green onions, chopped
- 4 clove garlic, minced
- 4 dried shiitake mushrooms, soaked and sliced
- 2 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp mirin
- 1/2 tbsp sugar
- 1 tsp sesame oil
- Marinade for beef: 2 tbsp soy sauce, 1/4 tsp white pepper, 1.5 tsp cornstarch
- Garnish: chopped green onion and sesame seeds
Instructions
- First, cut beef into slices. In a bowl, combine beef slices, soy sauce, white pepper, and cornstarch. Set it aside and let it marinate for at least 15 minutes.
- Slice onion, carrot and shiitake mushrooms. Chop napa cabbage leaves and green onions. Then mince the garlic. Set all the vegetables aside while you prepare for the sauce.
- To prepare the sauce, whisk together light soy sauce, dark soy sauce, mirin, sugar, and sesame oil in a bowl until well combined. Set it aside.
- Cook 2 servings of frozen udon noodles for 2 minutes less than package instruction. Drain and rinse in cold water. Set it aside.
- In a pan or wok, heat 2 tbsp of oil over medium-high heat. Add marinated beef and stir-fry until browned, about 3-4 minutes. Remove the beef from pan and set aside.
- In a same pan or wok, add 1 tbsp of oil. Stir fry minced garlic for about 15 seconds until fragrant. Then add all your vegetables and stir-fry until they begin to soften.
- Add cooked udon noodles and cooked beef to the same pan with the vegetables. Pour the sauce over the top and toss everything together, until noodles and vegetables are evenly coated. Stir-fry for about 2-3 minutes until everything is cooked through and well combined.
- Divide the beef udon stir-fry among 2 serving plates or bowls. Garnish with chopped green onions and sesame seeds. Serve hot and enjoy!
