WHAT IS BEEF YAKI UDON STIR-FRY?
Beef Yaki Udon Stir Fry is a Japanese inspired dish that combines thick and chewy udon noodles with slices of tender beef and a variety of vegetables, all tossed in flavorful and umami sauce. The result is a perfect balance of textures and flavors. It is a versatile and crowd-pleasing dish that is perfect for the whole family on a busy weeknight. You can use any protein or vegetables you have in hand. It is so easy and delicious that you will want to make it again and again!
INGREDIENTS:
- Udon noodles: I used frozen udon. You can find them in local Asian grocery store or online.
- Beef: I used sirloin. You can also use ribeye, beef steak, tenderloin, or any of your favorite steak cut
- Onion
- Carrot
- Napa Cabbage
- Garlic
- Dried Shiitake Mushrooms
- Green Onions
- Light Soy Sauce
- Dark Soy Sauce
- Mirin
- Sugar
- Sesame Oil
- Marinade for Beef: 2 tbsp soy sauce, 1/4 tsp white pepper, 1 tsp sesame oil, 1 tsp cornstarch
- Garnish: chopped green onion and sesame seeds
HOW TO MAKE BEEF YAKI UDON STIR FRY:
Marinate the Beef
First, cut beef into slices. In a bowl, combine beef slices, soy sauce, white pepper, and cornstarch. Let it marinate for at least 15 minutes.
Prepare Vegetables
Slice onion, carrot and shiitake mushrooms. Chop napa cabbage leaves and green onion. Then mince the garlic. Set all the vegetables aside while you prepare for the sauce.
Prepare the Sauce
In a small bowl, whisk together light soy sauce, dark soy sauce, mirin, sugar, and sesame oil until well combined. Set it aside.
Cook Udon Noodles
Cook 2 servings of frozen udon noodles for 2 minutes less than package instruction. Drain and rinse in cold water. Set it aside.
Cook the Beef
In a pan or wok, heat 2 tbsp of oil over medium-high heat. Add marinated beef and stir-fry until browned, about 3-4 minutes. Remove the beef from pan and set aside.
Stir-fry the Vegetables
In a same pan or wok, add 1 tbsp of oil. Stir fry minced garlic for about 15 seconds until fragrant. Then add all your vegetables and stir-fry until they begin to soften.
Add Udon, Beef, and Sauce
Add cooked udon noodles and cooked beef to the same pan with the vegetables. Pour the sauce over the top and toss everything together, until noodles and vegetables are evenly coated. Stir-fry for about 2-3 minutes until everything is cooked through and well combined.
Serve
Divide the beef udon stir-fry among 2 serving plates or bowls. Garnish with chopped green onions and sesame seeds. Serve hot and enjoy!

- 1 carrot, sliced
- 5 Napa Cabbage leaves, chopped
- 2 green onions, chopped
- 4 clove garlic, minced
- 4 dried shiitake mushrooms, soaked and sliced
- 2 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp mirin
- 1/2 tbsp sugar
- 1 tsp sesame oil
