Baileys Chocolate Cupcakes filled with Dulce De Leche

Description

Moist chocolate cupcakes with Baileys Irish Cream frosting stuffed with sweet Dulce de Leche. These are perfect for St. Patrick’s Day!


Ingredients

Chocolate Cupcakes

  • 1 cup + 2 tbsp cake flour
  • 1 cup granulated sugar
  •  cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 large egg
  •  cup vegetable oil
  • ½ cup milk of your choice
  • ½ cup hot water
  • store bought or homemade Dulce de Leche*
Baileys Irish Cream Frosting

  • 1 stick (½ cup) unsalted butter, room temperature
  • 2 cups powdered sugar
  • 34 tbsp Baileys

Optional Toppings/Decorations

  • 12 Macarons (Recipe from Pies & Tacos*)
  • Baileys (to fill the pipettes)
  • 4 ml Dessert Pipettes*
  • sprinkles

Instructions

Chocolate Cupcakes

  1. Preheat the oven to 350°F. Line cupcake tin with liners.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk egg, vegetable oil, and milk together. Then pour the wet ingredients over the dry ingredients (step 2). Mix until well combined.
  4. Pour hot water over the batter, then mix until combined.
  5. Spoon batter into prepared cupcake tins, filling only halfway.
  6. Bake for 17-20 minutes, or until a toothpick or testing knife comes out clean. Set aside and let cool completely.

Baileys Irish Cream Frosting

  1. Place butter in a mixing bowl. Using a handheld or standing mixer with paddle attachment, cream butter until light and fluffy.
  2. Add powdered sugar and mix until combined. Then add Baileys and mix until incorporated.
  3. Prepare a piping bag with a star tip. Add frosting into the piping bag and set aside.

Assembly

  1. First, use a spoon, knife, or an apple corer to make a hole in the center of the cupcake.

  2. Fill the hole with a dollop of Dulce de Leche.

  3. Pipe frosting over the cupcakes.
  4. (Optional) Add sprinkles, macarons, a shot of Baileys in a a pipette, caramel or chocolate drizzle, etc.

Notes

Cupcakes can be stored in the fridge for up to 3 days.
