The ice is often so finely shaved that it has a snow-like texture, melting instantly on the tongue.
What is the Difference Between Shaved Ice (bao bing) and Snow Ice (Xue Hua Bing)
Shaved Ice or Bào Bīng is made with plain ice that’s crushed or finely shaved into a slushy or crunchy texture. It doesn’t have any inherent flavor, so the sweetness comes entirely from the toppings. Snow Ice or Xuě Huā Bīng is known for its light, feathery texture that melts instantly in your mouth. It is made typically with milk and fruit purée before being frozen and shaved into thin, ribbon-like layers. Because the ice itself is sweet and flavorful, the toppings are often simpler, such as a drizzle of condensed milk, fresh fruit, or a scoop of ice cream, to let the delicate texture and taste of the snow shine through.

You only need a few ingredients to make the best Mango Shaved Snow Ice:

- Mango: use fresh ripe mangoes for the best result. If fresh mangoes are not available, you can also use frozen mangoes.
- Honey: helps sweetened the mango sauce. You can use other sweetener like agave or granulated sugar.
- Lemon Juice: helps slow down the oxidation process, which helps prevent browning in the mango sauce/puree.

How to Make Mango Shaved Snow Ice

- Peel and dice the mangoes.

- Blend mango chunks and milk together until you get a puree.

- Pour the mango puree into ice cube trays and freeze them for at least 6 hours or overnight.

- For the mango sauce, combine mango chunks, honey, lemon juice, and water together. Blend until smooth.

Step 5: Use a shaved ice machine or blender to create finely shaved ice.

Step 6: Top with diced mango chunks and a scoop of ice cream on top.

- 2 mangoes, diced
- 1 cup milk

- 1 mango, diced
- 1 tbsp honey
- 1 tbsp lemon juice

Instructions
Make Mango Shaved Ice
- Blend cubed mango and milk together until you get a puree. Pour the mango puree into ice cubes trays and freeze for at least 6 hours or overnight.
- Place the frozen mango puree into a shaved ice machine or shaved ice attachment. Blend to create finely shaved ice into a chilled bowl.
Make Mango Sauce
- Blend cubed mango, honey, lemon juice, and water together until smooth. Store in an air tight container in the refrigerator until ready to use.
Assemble the Dessert
- Add more diced mango chunks to the shaved ice and top with a scoop of ice cream. Pour mango sauce and drizzle condensed milk over everything. Serve immediately and enjoy!
