How to Make Taiwanese Dan Bing

- Make the Batter: In a bowl, add flour, tapioca starch, cornstarch, salt, and water. Whisk together until smooth. Then stir in chopped green onions. The consistency should be like a thin pancake batter.

- Prepare the Eggs: Whisk two eggs in a bowl.

- Cook the Crepe: Heat a non-stick cooking pan with cooking oil over medium heat. Pour a ladle of batter in the pan and swirl in a circular motion to coat the bottom evenly, like a thin crepe. Cook for 1-2 minutes until. Flip over and cook the other side for another 1-2 minutes. Transfer the cooked pancake and set aside.

- Cook the Eggs: Pour the whisked eggs in the same pan.

Step 5: While the egg is still slightly runny, place the pancake on top of the egg and cook for 1-2 minutes until set.

Step 6 Add Fillings: Flip the egg pancake combo over so now the egg side is facing up. Add shredded cheese and ham slices, or any of your preferred toppings.

Step 7 Fold or Roll: Use a spatula to fold the dan bing.

Step 8 Slice and Serve: Transfer the egg pancake to a cutting board and cut into small pieces.
