Spicy shrimp hand rolls are a quick, fresh, and flavorful twist on traditional sushi, made sushi rice and wrapped in crisp nori. Each roll is filled with tender shrimp tossed in a creamy, spicy sauce, paired with cucumber, avocado and carrots. They’re low in carbs, high in protein, and perfect for a light lunch or fun date night!

Spicy Shrimp Sushi Hand Roll
Ingredients
Sushi Rice
- 1 cup sushi rice, or short grain white rice
- 1 tbsp rice vinegar
- 2 tsp white sugar
- pinch of salt
Spicy Shrimp Hand Rolls
- 1 lb cooked shrimp, chopped
- ¼ cup Kewpie Mayo
- 3 tbsp Sriracha, more if you like spicy
- 2 green onion, chopped
- cucumber, julienned
- avocado, thinly sliced
- carrot, julienned
- clover sprouts
- black sesame, for garnish
- nori sheets, cut into half
Instructions
Make Sushi Rice (skip this step if you are using cooked white rice or brown rice)
- Cook sushi rice according to package instructions.
- Add cooked rice to a bowl along with rice vinegar, sugar, and pinch of salt. Mix until well combined.
Make Spicy Shrimp Hand Rolls
- In a bowl, combine chopped shrimp, Kewpie mayo, sriracha, and green onion. Mix well.
- Place half a nori sheet on a flat surface. Add about 1-2 tbsp of rice, then top with cucumber, avocado, carrots, and clover sprouts.
- Top with a spoonful of spicy shrimp mixture.
- Starting from the filling side, roll the nori into a corn shape. Use a grain of rice or a dab of water to seal the edge if needed.
- Sprinkle with sesame seeds and serve immediately. Enjoy!
