WHAT IS GOCHUJANG?

Gochujang is a traditional Korean red chili paste, made with gochugaru (Korean chili powder), fermented soybeans, glutinous rice, and salt. It has a deep vibrant red color and a complex flavor profile that is both spicy and slightly sweet. This paste is a staple in Korean cuisines, adding bold and spicy flavors to dishes like tteokbokki, rabokkibudae jjigae, and marinades for meats.

INGREDIENTS:

  • Frozen Udon Noodles
  • Butter (unsalted)
  • Garlic
  • Shallot
  • Heavy Cream
  • Gochujang (Korean chili paste)
  • Soy Sauce
  • Gochugaru (Korean chili flakes)
  • Green Onion
  • Grate Parmesan Cheese
  • Egg (optional)

HOW TO MAKE CREAMY GOCHUJANG NOODLES:

Cook the Udon Noodles:

In this recipe, I used frozen udon noodles. Cook the noodles according to package instructions. Once cooked, reserve 1/2 cup of noodle water and set it aside. Drain the noodles, rinse under cold water, and set them aside.

Sauté the Aromatics

In a pan, melt butter over medium heat. Add minced garlic and chopped shallots and sauté until fragrant.

Make the Creamy Gochujang Sauce

Add gochujang and cook for about 30 seconds.

Slowly pour in the heavy cream and reserved noodle water, then add soy sauce and gochugaru. Mix and bring the sauce to a simmer. Let it simmer for a few minutes until thickened.

Toss the Noodles

Add the cooked udon to the pan, toss to coat them evenly in creamy gochujang sauce.

Garnish and Serve

Transfer the noodles to a bowl. Top with grated parmesan cheese, chopped green onion, and an egg yolk. Serve hot and enjoy!

  • 2 pack frozen udon noodles
  • 3 tbsp butter (unsalted)
  • 3 clove garlic, minced
  • 2 shallots, chopped
  • 1 1/2 tbsp gochujang
  • 1/2 cup heavy cream
  • 1/2 cup reserved noodle water
  • 2 tsp soy sauce
  • 1 tsp gochugaru
  • 1 green onion, chopped (for garnish)
