Description
This easy Thai green curry wonton soup features savory wontons and veggies served in a bold and aromatic curry broth and topped with fresh herbs.

- 16-18 wontons (homemade or store bought)
- bok choy, or your choice of veggie
- 1 tbsp cooking oil
- 3 clove garlic, minced
- 2 tsp ginger, minced
- 2 tbsp Thai green curry paste
- 2 cups chicken stock
- 1 cup coconut milk
- 2 tsp fish sauce
- 2 tsp light brown sugar
- 2 kaffir lime leaves, torn
- 1/2 red bell pepper, chopped
- handful of Thai basil
Instructions
- In a pan or pot, add 1 tbsp of cooking oil over medium heat. Add minced garlic and ginger, and sauté until fragrant. Then add Thai green curry paste and stir-fry for 1-2 minute.
- Add chicken broth, coconut milk, fish sauce, brown sugar, and kaffir lime leaves. Bring the curry broth to a simmer.
- Add chopped red bed pepper and cook until soft. Then toss in a handful of fresh Thai basil. Turn off the heat and set the curry soup aside.
- Bring a pot of water to a boil, then add wontons. Stir gently with a spatula or spoon. Cook until wontons are floating to the top, about 4-5 minutes. At the last minute, throw in bok choy and cook until tender.
- Transfer cooked wontons and veggies to a bowl. Then pour green curry soup over the wontons. Garnish with chopped green onions, Thai red chili pepper, and more basil. Serve hot and enjoy!
