Description

This easy Thai green curry wonton soup features savory wontons and veggies served in a bold and aromatic curry broth and topped with fresh herbs.


Ingredients

  • 16-18 wontons (homemade or store bought)
  • bok choy, or your choice of veggie
  • 1 tbsp cooking oil
  • 3 clove garlic, minced
  • 2 tsp ginger, minced
  • 2 tbsp Thai green curry paste
  • 2 cups chicken stock
  • 1 cup coconut milk
  • 2 tsp fish sauce
  • 2 tsp light brown sugar
  • 2 kaffir lime leaves, torn
  • 1/2 red bell pepper, chopped
  • handful of Thai basil

Instructions

  1. In a pan or pot, add 1 tbsp of cooking oil over medium heat. Add minced garlic and ginger, and sauté until fragrant. Then add Thai green curry paste and stir-fry for 1-2 minute.
  2. Add chicken broth, coconut milk, fish sauce, brown sugar, and kaffir lime leaves. Bring the curry broth to a simmer.
  3. Add chopped red bed pepper and cook until soft. Then toss in a handful of fresh Thai basil. Turn off the heat and set the curry soup aside.
  4. Bring a pot of water to a boil, then add wontons. Stir gently with a spatula or spoon. Cook until wontons are floating to the top, about 4-5 minutes. At the last minute, throw in bok choy and cook until tender.
  5. Transfer cooked wontons and veggies to a bowl. Then pour green curry soup over the wontons. Garnish with chopped green onions, Thai red chili pepper, and more basil. Serve hot and enjoy!
