Smashed Cucumber Salad with Garlic

Description

This Asian smashed cucumber salad with garlic is a simple yet flavorful dish that is perfect for a quick appetizer or side dish. It only takes 15 minutes to make!


Ingredients

  • 4 medium cucumbers 
  • 3/4 tsp salt 
  • 4 clove garlic, minced 
  • 1 red chili pepper, minced (optional)
  • 1/2 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp white sugar
  • few drops of chili oil
  • handful of fresh cilantro, for garnish
  • white sesame seeds, for garnish

Instructions

  1. Wash the cucumbers and cut off both ends. Smash the cucumbers until they split open. Spoon out any large clumps of seeds, then chop them into big chunks.
  2. In a bowl, combine smashed cucumbers and salt. Mix and let it marinate for 10 minutes.
  3. Drain excess liquid into a separate bowl.  
  4. Add minced garlic, red chili pepper, soy sauce, rice vinegar, sesame oil, chili oil, and sugar. Toss everything together.
  5. Garnish with a handful of fresh cilantro and sprinkle with white sesame seeds. Serve immediately as a cold appetizer or side dish.
