WHAT KIND OF SESAME PASTE SHOULD I USE?
For a more authentic flavor, I recommend using Chinese Sesame Paste. You can find it in any Asian grocery store or online.
Chinese sesame paste is different from tahini. Although they are both made from sesame seeds, Chinese sesame paste and tahini differ in terms of flavor and texture. Chinese sesame paste is made from roasted sesame seeds, and has a richer and bolder flavor. Chinese sesame paste also tends to have a thicker texture compared to tahini. Tahini is made from raw sesame seeds, and has a milder and nuttier flavor. Tahini has a thinner and runnier texture, commonly used in Mediterranean dishes.
