Crispy bacon, perfectly cooked eggs, and gooey melted cheese, all sandwiched between crispy and flaky scallion pancake. Let’s take breakfast to the next level!

- Scallion Pancake, frozen
- 2 eggs
- 2 scallion, chopped
- 2 slices of bacon
- 1 cup shredded cheese
- salt
Instructions
- In a pan, heat 2 tbsp of oil. Add frozen scallion pancake and pan fry until golden brown and crispy on both sides. Set it aside.
- Next, cook the bacon and set it aside.
- In a small bowl, add 2 eggs and a pinch of salt and mix with a fork or whisk. Pour the egg into the pan. Then add chopped scallion, shredded cheese, and bacon on top.
- Add the cooked scallion pancake on top. Together with bacon, egg, and cheese, flip the whole sandwich over and fold it in half.
- Optional: drizzle soy sauce and/or chili oil onto the scallion pancake. Serve and enjoy!
