Crispy bacon, perfectly cooked eggs, and gooey melted cheese, all sandwiched between crispy and flaky scallion pancake. Let’s take breakfast to the next level!
Growing up in Taiwan, scallion pancake was one of my favorite snacks. Made from flour, water, and chopped scallions, it is rolled out thinly, pan-fried until crispy and flaky on the outside, and soft and chewy on the inside. Scallion pancakes are incredibly versatile and customizable. They can be enjoyed on their own as a snack or appetizer, or served along other dishes as part of a meal. You can get creative with any toppings or fillings to suit your taste! In this recipe, I am making a bacon egg and cheese breakfast sandwich with scallion pancake.
INGREDIENTS:
- Scallion Pancake (you can find scallion pancake in the frozen section of any Asian grocery store)
- Eggs
- Scallion, chopped
- Shredded Cheese, (I recommend mozzarella for cheesy pull)
- Bacon
- Salt
HOW TO MAKE SCALLION PANCAKE BREAKFAST SANDIWCH:
In a pan, heat 2 tbsp of oil. Add frozen scallion pancake and pan fry until golden brown and crispy on both sides. Set it aside.
Next, cook the bacon and set it aside.
In a small bowl, add 2 eggs and a pinch of salt and mix with a fork or whisk. Pour the egg into the pan. Then add chopped scallion, shredded cheese, and bacon on top.
Add the cooked scallion pancake on top. Together with bacon, egg, and cheese, flip the whole sandwich over and fold it in half.
Optional: drizzle soy sauce and/or chili oil onto the scallion pancake. Serve and enjoy!
