Looking for a healthy meal or a quick appetizer? These enoki mushroom beef rolls are tasty little rolls made with thin slices of beef wrapped around crispy enoki mushrooms and seasoned to perfection!

- 1/2 yellow onion, sliced
- 1/2 cup water
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tsp Hondashi
- 1 tsp sugar
- enoki mushroom
- beef slices
- 3 eggs
- green onion, for garnish
- sesame seeds, for garnish
Instructions
- PREPARE THE INGREDIENTS: Slice the onion and set it aside. Trim the root end of the enoki mushroom and separate them into 12 small bunches. Chop green onion and set it aside. Crack 3 eggs into a bowl, mix and set it aside.
- ASSEMBLE ENOKI BEEF ROLLS: Take a small bunch of enoki mushrooms and place it on a thin slice of beef. Roll it up like a burrito. Repeat with the remaining mushrooms and beef slices.
- PREPARE SAUCE: In a pan, add water, soy sauce, mirin, sugar, and Hondashi. Bring to a simmer and stir until sugar and Hondashi dissolved.
- COOK: Add sliced onion to the pan. Bring to a simmer again and cook for 3 minutes. Add the beef rolls on top of the onion. Cover with lid and cook for another 3 minutes, or until the beef is cooked through.
- DRIZZLE EGGS: Drizzle the egg all over the pan and on top of the enoki beef rolls. Cover with lid and simmer for 3 minutes. Remove the lid. Garnish with green onions and white sesame seeds. Serve by itself or over steamed rice, enjoy!
