INGREDIENTS:
- Yellow Onion
- Beef Slices
- Water
- Soy Sauce
- Mirin
- Sugar
- Hondashi Powder (you can get it from local Asian grocery store or online)
- Eggs
- Green onion, for garnish
- White sesame seeds, for garnish (optional)
HOW TO MAKE ENOKI BEEF ROLLS:
Prepare the ingredients
Slice the onion and set it aside. Trim the root end of the enoki mushroom and separate them into 12 small bunches. Chop green onion and set it aside.
Crack 3 eggs into a bowl. Mix and set it aside.
Assemble enoki beef rolls
Take a small bunch of enoki mushrooms and place it on a thin slice of beef. Roll it up like a burrito. Repeat with the remaining mushrooms and beef slices.
Cook the sauce and onion
In a pan, add water, soy sauce, mirin, sugar, and dashi. Bring to a simmer, then add sliced onion. Bring to a simmer again and cook for 3 minutes.
Cook the beef rolls
Add the beef rolls on top of the onion. Cover with lid and cook for another 3 minutes, or until the beef is cooked through.
Finish off with silky eggs
Drizzle the egg all over the pan and on top of the enoki beef rolls. Cover with lid and simmer for 3 minutes. Remove the lid. Garnish with green onions and white sesame seeds. Serve by itself or over steamed rice, enjoy!
