One Pot Tomato Beef Noodle Soup

Description

This one pot meal combines tender beef, sweet and tangy tomatoes, and chewy noodles simmered in a rich and savory broth. Perfect quick and hearty meal!


Ingredients

  • 1 serving noodles of your choice
  • 67 thinly sliced beef (or shabu meat)
  • 1 tbsp cooking oil
  • 3 clove garlic, minced
  • 1 cup mushroom
  • 1/4 onion, sliced
  • 3 medium sized tomatoes, diced
  • 2 cups beef stock
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 2 scallions, chopped (for garnish)

Instructions

  1. Cook noodles according to package instructions. Drain and set it aside.
  2. In a pot, heat 1 tbsp of oil over medium heat. Add garlic, sliced onion, and mushroom. Sauté until fragrant, about 2-3 minutes.
  3. Add diced tomatoes to the pot and cook until softened.
  4. Pour in the beef broth, soy sauce, tomato paste, sugar, salt, and white pepper. Mix until well combined. Bring the broth to a boil.
  5. Add beef slices and continue cooking, while skimming off the foam on top. Taste and add more salt and seasoning if needed.
  6. Add cooked noodles back into the pot. Turn off the heat and garnish with chopped green onions. Serve hot and enjoy!
