Instructions

  1. In a large bowl, combine ground chicken, chopped cabbage, minced garlic, ginger, green onion, egg, soy sauce, Shaoxing wine, sesame oil, salt, white pepper, and sugar. Mix thoroughly until all the ingredients are well incorporated.
  2. To assemble the wontons- METHOD #1: Place a spoonful of filling in the center of the wonton wrapper and brush the edges with water. Lift and pinch the opposite corners together, make sure to seal the edges to prevent leaking and pinch the tip together.  METHOD #2: Place a spoonful of filling in the center of the wonton wrapper and brush the edges with water. Fold the wrapper over to form a triangle. Wet the two corners, pull them toward each other and pinch to form the wonton.
  3. In a deep pan or pot, add neutral oil and heat over medium-high heat until it reaches 350F (180C). To test if the oil is hot enough, dip a wooden chopstick into the oil. If the oil sizzle, that means the oil is ready.
  4. Carefully add the wontons to the hot oil in small batches, making sure not to overcrowd the pot. Fry the wontons for about 5 minutes, or until they are golden brown and crispy. Flip the wontons a few time so each side gets fried evenly. Use a slotted spoon or strainer to remove the wontons and transfer them to a plate lined with paper towel.
  5. Serve the fried chicken wontons immediately with sweet chili sauce or your favorite dipping sauce.

Notes

  • You can substitute chicken with ground pork, beef, shrimp, or vegetables.
  • Other dipping sauce options are soy sauce, chili oil, sriracha, or spicy mayo.
