Chicken Chow Mein (Better than Take-Out)

Description

This classic Chinese dish features stir-fry noodles with tender chicken, variety of vegetables, and a brown savory sauce. You can use any vegetables or meat you like, making it an ideal weeknight meal.


Ingredients

Noodles

  • Chow mein noodles

Marinade Chicken

  • 1/2 lb chicken thigh or chicken breast
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 2 tsp cornstarch
  • 1 tsp oil 

Vegetables

  • 4 clove garlic, minced
  • 1 tbsp ginger, minced 
  • handful of yu choy, or 2 cups of any vegetables 
  • 1 carrot, julienned 
  • 1/2 onion, thinly sliced 
  • 1 bell pepper, sliced 
  • 4 green onions, chop into 2” long pieces 
  • 2 cups bean sprouts 

Sauce

  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp water
  • 1 tbsp Shaoxing wine
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tsp sugar 

Instructions

1. Marinade the Chicken 

In a bowl, combine chicken, soy sauce, Shaoxing wine, salt, white pepper, and cornstarch. Mix well and set it aside. Let it marinate for about 15 minutes.

2. Prepare the Sauce

While the chicken is marinating, prepare the sauce. In a bowl, combine light soy sauce, dark soy sauce, Shaoxing wine, oyster sauce, sesame oil, sugar, and water. Whisk together and set it aside.

3. Stir-Fry Chicken 

In a pan or wok, add 2 tbsp of oil and heat over medium-high heat. Add the marinated chicken and stir-fry until chicken is brown. Transfer the cooked chicken to a plate and set it aside.

4. Stir-Fry Vegetables

In the same pan, add 2 more tbsp of oil. Add garlic and ginger, and sauté until fragrant. Then add yu choy, carrot, onion, red bell pepper, and green onions. Sauté until all the vegetables are soft.

5. Add Noodles

Add cooked noodles to the pan and stir-fry for about 1-2 minutes.

6. Combine with Sauce 

Transfer cooked chicken back to the pan. Add bean sprouts and stir-fry for another 1-2 minutes. Pour the sauce on top of the noodles. Toss everything together until well combined. Taste the chow mein and add more salt and white pepper if needed. Serve hot and enjoy!
