Description
These chewy chai spiced oatmeal cookies are loaded with cinnamon, ginger, nutmeg, ground cloves, all spice, cardamom, and black pepper. Perfect cookies to cozy up with a cup of tea and will warm you up from the inside out!

- 1 cup unsalted butter, room temperature
- 1 ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla
- 1 ½ cup all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 3 cups old fashioned oats
- 1 cup chopped walnuts (optional)
Spices
- 2 tsp cinnamon
- 1 tsp ground ginger
- ½ tsp all spice
- ½ tsp ground cloves
- ½ tsp nutmeg
- ½ tsp black pepper
- 1 tsp cardamom (optional)
Instructions

Preheat the oven to 350°F. Line baking sheets with parchment paper or grease it with cooking spray.

In a large mixing bowl, use a handheld or standing electric mixer and beat butter and sugars together until creamy. Then add eggs and vanilla, and mix until well combined.

In a separate bowl, mix together flour, baking soda, salt, and all the spices.

Add the dry ingredients into the wet ingredients. Mix until well combined.

Stir in old fashioned oats and walnuts.

Divide the dough into 1½ tablespoon sized balls and drop them onto prepared baking sheets. Leave 2-inch space between each cookie dough.

Bake for 10-12 minutes, or until cookies turn golden brown. Let cool for 10 minutes. Enjoy!
Notes
Cookies can be stored in an air tight container for up to 5 days.
