- 3–4 chicken thigh or chicken breast
- 1/4 cup light soy sauce
- 1/4 cup mirin
- 3 clove garlic, minced
- 3 tsp ginger, minced
- 4 tbsp brown sugar
- 3 tsp cornstarch
Instructions
- In a bowl, mix soy sauce, mirin, minced garlic, ginger, brown sugar, and cornstarch together.
- In another bowl, add chicken. Then pour 1/3 of the sauce on the chicken. Give it a good mix and let the chicken marinate for at least 1 hour.
- Preheat the air fryer to 400F.
- Place the chicken thighs skin side up in the air fryer and cook for 10 minutes. Brush the chicken skin lightly with the teriyaki sauce, then cook for another 5 minutes until skin turns golden brown.
- While the chicken thighs are in the air fryer, add the remaining sauce to a pan and cook over medium heat. Stir occasionally and let it simmer until the sauce thickens.
- Cut the cooked chicken into slices or cubes. Pour the teriyaki sauce over chicken. Serve hot with rice and some vegetables. Enjoy!
