These chewy potato noodles, shaped like adorable little mushrooms, are tossed in my mom's famous chili oil. The first time I made these noodles, I was trying to use up some leftover potatoes. After making it a few times, I have to say that I am obsessed because it is so fun and easy to make. These noodles look like they hopped straight out of Super Mario game! The bouncy texture combined with the garlicky, spicy chili oil creates a satisfying bite that'll keep you coming back for more!

What Are Potato Noodles
These potato noodles are what I called Asian gnocchi. Made from just 2 ingredients - potato starch and water, these potato noodles have an incredible satisfying chewy texture similar to boba pearls or Korean rice cakes. They aren't your typical noodles, they are like tiny mushroom-shaped bites that bounce and wiggle on your plate. Not only are they fun to make, but also delicious to eat!
Ingredients
You only need 3 ingredients to make these potato noodles:
- Potatoes
- Potato Starch
- Water
To make chili oil, you'll need:
- Garlic
- Green Onion
- Chinese Chili Flakes
- Chili Powder (gochugaru)
- Soy Sauce
- Black Vinegar
- Neutral Oil (avocado, vegetable, canola, peanut, or grapeseed oil)

How to Make Chili Oil:
While you can certainly get store-bought chili oil, but I prefer to make my own at home. I wrote a whole blog post about chili oil, including step-by-step instructions.
It is super easy to make your own chili oil at home. In a bowl, combine minced garlic, chopped green onions, Chinese chili flakes, chili powder, soy sauce, and black vinegar together.
In a small saucepan, add oil and heat over medium heat. Oil should be ready when you start seeing small bubbles. You can also test the heat by submerging a wooden chopstick in the oil and it should start to sizzle. Carefully pour the hot oil over the chili sauce mixture. Stir and mix until well combined. Taste and add more seasoning if desired.
How to Make Potato Noodles
Step 1: Peel and chop the potatoes into small cubes.
Step 2: Add potato to a pot of water. Bring it to a boil and cook until soft and fork- tender.
Step 3: Mash the potatoes until smooth and no lumps.
Step 4: Add the potato starch to the mashed potatoes. Add water gradually and use your hands to mix.
Step 5: Keep kneading until it forms a smooth, pliable dough.
Step 6: Take about 1 inch dough, roll into a ball, then press halfway down with a clean wine bottle to create a mushroom shape.
Step 7: Repeat with the remaining dough.
Step 8: Bring a pot of water to a oil, add potato noodles, then cook for a few minutes until they float to the top and become bouncy.
Step 9: Transfer the potato noodles to a plate or bowl.
Step 10: Add the chili sauce, then drizzle hot oil on top.
How to Serve Potato Noodles
Toss the potato noodles with chili oil, then garnish with chopped green onions. Serve hot and enjoy!

Variations and Substitutions
- Potato - you can use either Yukon gold potato or russet potato
- Heat Level - Adjust the amount of chili flakes and chili powder to your spice preference.
- Sauce - you can use either store-bought or homemade chili oil. If you don't like spiciness, try this dumpling dipping sauce instead!
- Shape - if you can't get the mushroom shape right, roll them into a cylinders like regular noodles, they'll taste just as good!
- Garnish - you can garnish the potato noodles with sesame seeds, cilantro, or more chili flakes.
Top Tips
- Mash your potatoes thoroughly and make sure there are no lump.
- Test your oil temperature with a wooden chopstick - when it sizzles with small bubbles, it's ready.
- Don't rush the shaping process - slow and steady prevents cracks.
- If your dough cracks while shaping, it's too dry. Add water, one teaspoon at a time.
- Cook the noodles in plenty of water to prevent sticking.

- 2 medium size russet potatoes (about 420g)
- 1 ⅓ cup of potato starch (about 200g)
- ½ cup of water, adjust if needed
- 1 green onion, chopped (for garnish)
For the Chili Oil:
- 2 tbsp soy sauce
- 1 tbsp black vinegar
- ½ tbsp Chinese chili flakes
- ½ tsp chili powder (gochugaru)
- 3 clove garlic, minced
- 1 green onion, chopped
- 2 tbsp hot neutral oil (avocado, canola, vegetable, grapeseed, peanut)
Instructions
Make Potato Noodles:
- Peel and chop the potatoes into small cubes.
- Add potato to a pot of water. Bring it to a boil and cook until soft and fork-tender.
- Drain and transfer the cooked potatoes to a big bowl. Use a fork or potato smasher and mash the potatoes until smooth and no lumps.
- Add the potato starch to the mashed potatoes. Add water gradually (little at a time) and use your hands to mix. Keep kneading until it forms a smooth, pliable dough. Add more water if the dough is too dry, and add more potato starch if the dough is too wet.
- Take about 1 inch dough, roll into a ball, then press halfway down with a clean wine bottle to create a mushroom shape. Repeat with the remaining dough.
- Bring a pot of water to a oil, add potato noodles in batches, then cook for a few minutes until they float to the top and become bouncy.
- Transfer the potato noodles to a serving plate or bowl. Add the chili sauce, then drizzle hot oil on top.
- Toss the potato noodles with chili oil, then garnish with chopped green onions. Serve hot and enjoy!
Make Chili Oil:
- In a bowl, combine soy sauce, black vinegar, Chinese chili flakes, chili powder, garlic, and green onion together.
- In a small saucepan, add 2 tablespoon of neutral oil and heat over medium heat. Oil should be ready when you start seeing small bubbles. Taste and add more seasoning if desired.
