Easy Tomato Beef Noodle Soup

There is something so comforting about a steaming bowl of noodle soup. Sometimes I have days where I just want to cook and enjoy a pot of noodle soup for myself, and lately this Tomato Beef Noodle Soup has been my go-to meal. It is hearty, flavorful, and comes together in just one pot for an easy, no fuss meal. Plus, less dishes to wash! It combines tender beef slices, sweet and tangy tomatoes, and chewy udon noodles simmered in a rich and savory beef broth. It is the kind of dish that warms you up and satisfies every craving.

INGREDIENTS

  • Noodles of your choice
  • Cooking Oil
  • Thinly Beef Slices
  • Garlic
  • Mushroom
  • Onion
  • Tomatoes
  • Beef Stock
  • Tomato Paste
  • Soy Sauce
  • Sugar
  • Salt
  • White Pepper
  • Green Onion

HOW TO MAKE A ONE POT TOMATO BEEF NOODLE SOUP?

Boil the Noodles

Bring a pot of water to a boil. Add your noodles of choice and cooking according to package instructions. Drain, rinse, and set it aside.

Sauté Aromatics

In a pot, heat 1 tbsp of oil over medium heat and add garlic, onion, and mushroom. Sauté until fragrant, about 2-3 minutes.

Cook the Tomatoes

Add the diced tomatoes to the pot. Cook for 3-5 minutes until softened.

Build the Broth

Pour in the beef broth, soy sauce, tomato paste, sugar, salt, and white pepper. Mix well to combine and bring the broth to a boil.

Add Beef Slices and Noodles

Add thinly beef slices to the pot and continue cooking, while skimming off the foam on top. Taste and add more salt and seasoning if needed. Then add cooked noodles back into the pot.

Garnish and Serve

Turn off the heat and garnish with chopped green onions. Serve hot and enjoy!

  • 67 thinly sliced beef (or shabu meat)
  • 1 tbsp cooking oil
  • 3 clove garlic, minced
  • 1 cup mushroom
  • 1/4 onion, sliced
  • 3 medium sized tomatoes, diced
  • 2 cups beef stock
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 2 scallions, chopped (for garnish)

Instructions

  1. Cook noodles according to package instructions. Drain and set it aside.
