WHAT IS A DUMPLING SKIRT?

The dumpling skirt is a crispy, web-like layer made from a simple batter of cornstarch, flour, and water. It forms when the batter crisps up in a hot pan, creating a golden-brown lacey crust that holds your dumplings together. Not only is it visually impressive, but it also adds a crunchy and crispy texture to the soft dumplings.

HOW TO MAKE A CRISPY DUMPLING SKIRT?

Prepare the Slurry/Batter

In a small bowl, whisk together cornstarch, flour, and water. Set it aside.

*Add a little more water if you are using frozen dumplings or using a bigger pan.

Pan Fry the Dumplings

In a nonstick cooking pan, add 2 tbsp of oil and heat over medium high heat.

Once the oil is hot, arrange the dumplings in a circular pattern (see photo). Make sure they are not touching too closely. Pan fry for a few minutes until the bottoms of the dumplings are golden brown. If you are using frozen dumplings, you may need an extra 2-3 minutes.

Pour the Batter and Steam

Whisk the prepared slurry/batter again before adding to the pan. Pour the batter around the pan, ensuring it surrounds the dumplings evenly and fills the empty spaces between the dumplings.

Reduce the heat to medium heat. Cover the pan with a lid and let the dumplings steam for about 5 minutes, or until cooked through.

Uncover and Crisp Up

Remove the lid and let the batter cook until all the water has evaporated and the skirt turns crispy and golden brown. Turn off the heat.
