Great way to use stale croissant, this viral grilled cheese sandwich combines spicy kimchi with melted cheese, all sandwiched together between two candied buttery croissants. Who doesn’t like crispy, sweet, salty, and buttery exterior with a little bit of spice and amazing cheese pull!
To be honest, creating this sandwich was a total accident. My fridge is usually empty by the end of the week. When I came home from work last Friday, I found half jar of kimchi and leftover cheese slices left in my fridge. I also had 2 stale croissants that I had forgotten about. I was too tired to go grocery shopping and also too cheap to order food delivery. And all of the sudden, I remember seeing this viral trend on TikTok (@Alexawhatsfordinner), where people smash stale croissants and make it into a sandwich. I thought why not, lets give it a try!
Smashed candied croissant is exactly what it sounds like. You smash the croissant until it is flat, slathered with butter, drizzled with honey, and seared in a hot pan until crispy and caramelized. It might seem like a weird combination, but TRUST ME, this sandwich is surprisingly so good and satisfying. Its spicy, buttery, slightly sweet, crispy, and oozy. If this Kimchi Grilled Cheese Sandwich is not perfection, I don’t know what is!

INGREDIENTS:
- 2 Croissants
- Butter
- Honey
- Cheese
- Kimchi
INSTRCUTIONS:
Using a rolling pin, roll the croissants until flattened and thin.
Heat a large skillet or pan over medium-high heat. Add butter and wait until it is melted. Add the first croissant and drizzle honey on both sides. Cook until both sides are caramelized and golden brown. Repeat the process with the second croissant.
To make the sandwich, pile the cheeses followed by kimchi to the first candied croissant. Place the other croissant on top. Press down gently with your hand or a spatula. Cook until cheese are melted. If the croissant is getting too brown or burnt, lower the heat or remove from the stove to cool down.

- 2 croissants
- 1–2 tbsp unsalted butter
- honey for drizzle
- 2 slices of American or cheddar cheese
- 2 slices of Gruyere or Muenster cheese
- Kimchi
Instructions
- Using a rolling pin, roll the croissants until flattened and thin.
- Heat a large skillet or pan over medium-high heat. Add butter and wait until it is melted. Add the first croissant and drizzle honey on both sides. Cook until both sides are caramelized and golden brown. Repeat the process with the second croissant.
- To make the sandwich, pile the cheeses followed by kimchi to the first candied croissant. Place the other croissant on top. Press down gently with your hand or a spatula. Cook until the cheese is melted. If the croissant is getting too brown or burnt, lower the heat or remove from the stove to cool down.
- Cut into half for the cheese pull. Enjoy!
